Another week, another box and another great week of meals. It’s mad to think that I’ve had on my goals for years to start thinking properly about where my food is coming from and buying good quality produce and I’m finally doing it and it’s a delicious as I expected!
What was delivered –
- 300g diced lamb
- 300g beef meatballs
- 2x smoked haddock
- 1 aubergine
- 250g kale
- 1 green cabbage
- 4 red onions
- 1 broccoli
- 1 pointed red pepper
- 1 fennel
What we made –
Thursday – Lamb and pepper kebabs with fried cabbage and goats cheese and potato wedges – the kebabs are a Gino D’Acampo recipe and the cabbage is homemade – recipe to follow ;).
This is one of my ALL TIME favourite dishes, the lamb is marinated with fennel seeds and honey and it just tastes so damn good! The goats cheese was purchased with the monthly Sainsbury’s shop and used for 2 dishes this week – a great use of bulk buying!
Friday – Red Lentil Dahl with Roasted Fennel – This is a Detox Kitchen recipe, however I added some extra bits to the Dahl including cabbage (we had lots haha) and the stem of our broccoli! It was delicious!
I topped this with yogurt and red onion and it just added something extra. I always think I won’t enjoy Dahl but it pleasantly surprises me every time! Also being able to add in a few bits from the fridge made it extra good.
Saturday – Nduja Pizza – recipe here
We bought a block of nduja months ago and it lasts ages so it was a great way to finish it up! All other ingredients we had in the cupboard and the mozzarella was purchased in our monthly Sainsbury’s delivery as it lasts ages!
Sunday – It was valentines day! We got a takeaway – you don’t expect me to cook even then do you 😉
Monday – Smoked haddock, roasted broccoli and cabbage and boiled potatoes
Listen, I know this sounds horrible ok. But it really really isn’t! Have it with lots of butter and it’s honestly delicious!
Tuesday – Coconut Rice with Aubergine – Meera Sodha
This was my first time cooking this dish and my my it was delicious!! So so tasty and actually really easy. I added in some cabbage to bulk it up.. and we had some left!
Wednesday – Paneer, Tomato and Kale Saag – Meera Sodha
I’m a little bit obsessed with here and her dishes are excellent when you are looking for a simple veggie dish!
Let me know if you give any of these a go! I’m two weeks in and I am loving coming up with recipes and showing you guys what I’m making with what we have delivered. I know that can be one doubt when deciding whether to order a fruit and veg box and you have to come up with what to make – so hopefully this shows you that you can do a lot of different things with what comes and it goes a long way and making a few tweaks with some recipes here and there!
