Oh this side is so tasty and so easy!! I used to really not enjoy Fennel and uncooked it does have a very strong taste. If you don’t like aniseed/liquorice I can understand why it wouldn’t be your fave. But cooked – now that is a different story.
Ingredients – serves 2 as a side
1 whole fennel, washed and the end of the fronds cut off
1 lemon, zest
1 tsp chilli flakes
Olive oil
Method
Heat oven to 200 (180 fan).
Slice the fennel in half lengthways and then into wedges. Lay on to a baking tray.
Drizzle with olive oil and then grate over the lemon zest and sprinkle over the chilli flakes. Toss together.
Bake in the oven for 40 minutes. Perfect accompaniment to anything – pork goes incredibly well with Fennel, or these tasty lamb chops!
Keep on eye on them though, you want them to be soft and a little crispy but not over done!
