Every now and then I make something my boyfriend deems ‘the best thing I’ve ever cooked’. This was one of those times and guess what – a totally veggie dish!
Ridiculously easy and quick to make, these make a great weeknight dinner.
Ingredients – serves 2
1 and 1/2 peppers in total of mixed colour, finely sliced
1/2 red onion, finely sliced
1/2 white onion, finely sliced
150-200g cheddar (grated)
4 large tortilla wraps
1/2 tsp paprika
1/2 tsp smoked paprika
1/4 tsp cumin
1/2 tsp mixed herbs
1/4 tsp garlic
Heat some oil in a pan and add the onions and peppers along with the the spices. Heat on a medium heat for about 10-15 minutes until everything is soft and well coated in the seasoning.
Remove from the heat and set aside to cool down slightly.
Get a large frying pan and heat to a medium temperature (no oil needed). While it’s heating up lay out one tortilla wrap and add half the veggie mixture to the wrap, covering almost all of it – leaving about 1 inch from the edge free. Sprinkle over half the grated cheese to the top of the veggie mix and then pop another tortilla on top. Press down on the top and around the edges to flatten it.
Gently pop it in the frying pan and let it cook for a couple of minutes until the bottom goes crispy and you can see the cheese starting to melt inside. Very carefully using a spatula and your hand flip the quesadilla over and let this cook on the other side for 2-3 minutes.
Slide out of the pan and slice into quarter. Repeat with the other tortillas and rest of the mix to make the second one.
Serve with some salsa, guac and sour cream.
