I seem to a be a bit obsessed with making dinners that have that ‘put together yourself’ vibe – i.e. something in a flatbread/pitta/taco – I think it might be because it makes the dinners seem a bit fancier ha ha! Anyway these skewers are super tasty and easy to make (my fave combo!). I hope you’re all staying safe out there 🙂
Ingredients
1 lime, zest and juice
Small knob of ginger, grated
2 cloves of garlic, grated/finely chopped
1/2 chilli, finely chopped
Handful of coriander, finely chopped
2 chicken breasts, chopped into cubes
2-3 peppers, chopped into squares
To serve – pitta bread or flatbreads, iceberg lettuce, grated carrot, natural yogurt mixed with fresh mint, coriander and grated cucumber and potato wedges.
Method
Throw the chicken pieces and peppers into a mixing bowl. Add the ginger, garlic, chilli, coriander and lime zest and juice along with some salt pepper and 2 tbsps of olive oil. Mix everything together, cover and put in the fridge for at least 2 hours.
When it’s time to cook add the chicken and peppers to 4 skewers. Heat a griddle pan up with some oil and cook for 5 minutes on each side.
Cover with foil and cook for a further 10 minutes in the oven until the chicken is cooked through.
Serve the chicken and peppers in a pitta with some lettuce and grated carrot and top with the natural yogurt.
