This dinner is made time and time again in our house because it’s so ridiculously quick and easy to make! Gnocchi is so quick and actually can be homemade pretty easily as well if you can’t find any in the supermarket :). This is another great dish for using up some leftover veg in the cupboards/fridge. Ingredients – serves 2
1 x red onion, finely sliced
1 x white onion, finely sliced
1 x garlic clove, crushed
125g bacon lardons or regular bacon cut into cubes
Handful of plum tomatoes, halved
Handful of basil, finely chopped
Bring a pan of water to the boil.
Add the onions and the bacon lardons to a pan with a dash of olive oil and cook for around 5 minutes.
Add the tomatoes for another few minutes, stirring occasionally, until they are soft.
Add the gnocchi to the boiling water, cover and cook for 2-4 minutes until it rises to the top of the pan. Drain and add to the onion mix with a sprinkling of basil.
Stir together and serve!
