Bean Burgers

Fancying a burger but still going with the veganuary challenge I thought I’d make some delicious bean burgers! These were so easy to make and actually much lighter than a regular burger. They were so easy to make and tasted super good!

Ingredients

400g kidney beans

1 tbsp breadcrumbs

1 tsp paprika

1 tsp chilli powder

Guacamole – use this recipe for an excellent guac!

Burger buns

To serve – Sweet potato wedges

 

Method

Drain the kidney beans and mash them together with the breadcrumbs, paprika and chilli powder. 

Mix it together a little with your hands and then roll into 4 patties. Heat a little oil in the pan and heat these for around 5 minutes on each side until a little crispy.

Meanwhile, mix all the guacamole ingredients together. 

Grill the buns in the oven for a couple of minutes each side. Serve the burgers on the buns with a little vegan mayo on top and top with some chunky guacamole. Serve with some delicious sweet potato fries and salad!
