Anyone who knows me knows I bloody love an aubergine. I could eat it everyday. This deliciously simple dish went perfect as part of a vegan meze I did the other weekend!
1 tbsp sesame oil
1 tbsp soy sauce
2 tsp miso paste
Salt and pepper
Preheat the oven to 180 degrees Celsius.
Slice the aubergines into rounds about 1 cm thick.
Lay on a baking tray.
Mix the remaining ingredients together and brush 2/3rds of the mix over the slices. Put in the oven for 30 minutes.
Remove from the oven, turn over and brush with the remaining mix. Put back in the oven for another 10-15 minutes.
Serve and enjoy!
