Despite the fact that summertime is over, salads still have their place in the winter and I love making up salads… in fact the following is a direct quote from my sister 😛 :
You are so good at salads
This one is no exception and was light and delicious. If you are a veggie, remove the cod and bacon and just double the ingredients!
2 avocado, finely sliced
Soft Goats cheese
Spinach, enough for 2
Handful of pine nuts
50g walnuts (roasted)
2 slices of bread, cut into cubes
6 slices streaky bacon
Dressing – 2tbsp extra virgin oil, 1 tbsp apple cider vinegar, half a lemon juice
Served with: 2 pieces of cod
Wrap the cod in a 3 slices of bacon with some lemon zest and grated garlic and roast in the oven for 20 minutes.
After 10 minutes, add the bread cubes to a tray and cook in the oven for 10 minutes.
Make up the salad!
In a bowl, mix the spinach, goats cheese, spring onion, avocado, pine nuts and roasted walnuts with the dressing. When the croutons are cooked, top the salad with them.
Serve with a piece of lovely cod and enjoy! Such a simple dinner, but so light and tasty!
