You guys know how much I love some pasta. My favourite ‘special pasta’ can be found here as an earlier recipe. This recipe is like.. the grown up version of that, the fancy version if you will! Still just as easy, just a little extra ;).
Ingredients – Serves 2
100g Pancetta, chopped
125g Shittake mushrooms, sliced
1 courgette, cubed
150g pasta (whatever type you fancy)
Parmesan
100ml Double cream
Method
Drizzle the courgette with a little oil and roast in the oven (180 degrees Celsius) for 30 minutes.
Cook pasta to packet instructions.
In a frying pan, gentle fry the mushrooms and the pancetta until the mushrooms are soft and the pancetta is crispy!
Remove the courgette from the oven and add it to the pan along with the double cream and a good grating of parmesan and some black pepper.
Let this bubble for a couple of minutes, drain the pasta and mix with the lovely creamy mixture.
Serve, with some more parmesan ;).
