The start of summer, the start of easy, delicious and fresh meals and this dinner was no exception. Ridiculously easy and incredibly tasty. p.s. yes, I do sometimes eat on the floor :P.

Minted Lamb Kebabs, I used these from Tesco.
Greek salad – tomatoes, feta & red/spring onion
1 Onion, sliced
New potatoes, cubed
Pine nuts, toasted
Place the potatoes on a baking tray, drizzle with olive oil and roast in the oven for 30 minutes.
After 15 minutes, pop the lamb kebabs on a tray and roast for 15 minutes,
Gently fry the onion in a little olive oil.
Mix some chopped tomatoes, chopped spring onion and feta with a little extra virgin olive oil to make your greek salad.
Serve up! Along the tzatziki, flatbreads and spinach!
An alternate version is some delicious sweet potato, roasted courgette and some wraps instead of flatbreads!
