You guys know I flipping love a pasta dish and I could eat pesto on it’s own in a bowl. Pesto pasta for dinner is a staple go to when I don’t know what I want for my dinner or I’m eating alone and this is just a fancy version of it! Let me know what you think!
Ingredients – Serves 2
1 lemon, juice and zest from half
4 tbsp olive oil
1 clove of garlic
1 tbsp parmesan/vegan parmesan
1 tbsp water
1 red onion, sliced
1/2 tsp balsamic vinegar
Optional: 100g feta cheese
Heat the oven to approx 170 degrees Celsius.
Pop the walnuts on a tray and the garlic clove (still in its skin) in the corner or on a separate tray and roast everything for approx 10 minutes. Remove from the oven.
Cook pasta to packet instructions.
Blitz 50g of the walnuts, the roasted garlic clove (skin removed), olive oil, parmesan, rocket, lemon zest and juice and 1 tbsp of water in a blender until smooth or to the texture you like your pesto.
In a small pan, add some oil along with the onions and slowly cook. Once soft add the balsamic vinegar and cook until a little caramelised.
Roughly chop the remaining walnuts.
Drain the pasta and pop back in the pan tossing with the lovely caramel onions, the chopped walnuts and the pesto. Crumble on some feta if using and stir and grind some lovely black pepper on top!
