There is a place I get my lunch on the rare occasions I don’t bring a lunchbox from a heavenly place called Finch’s, by London Fields. They do these amazing wraps or boxes and they are honestly so freaking good. I swear everyone in my work gets one of these daily, we must be single handily funding them ha!
You know one of my fave things is to try and recreate my fave meals for lunches so I thought why not give this one a try! And oh wow did it go to plan!
Be wary – this does take a little prep time but trust me, worth it.
Ingredients
Halloumi
Natural yogurt
1 clove Garlic, grated
1 Lemon zest and juice
Iceberg lettuce
Flatbreads
Homemade falafels – I used this recipe. Ridiculously easy and so tasty.

Method
Make the homemade falafels using the link above. These take a bit of time, but you can make enough for the whole week which is great!
When these are done you can crack on with the rest.
Boil the kettle. In a bowl add the couscous and pour over the boiling water with a vegetable stock cube. Cover and leave for 10 minutes.
Mix together the lemon juice, zest, garlic clove and yogurt.
Fry the halloumi.
Lunchbox up! Add some couscous, with some iceberg lettuce, a dollop of houmous, a dollop of yogurt with a couple of falafels and a few pieces of halloumi! Take a piece of flatbread to have with!
So so soooo good!
