We bloody love a ramen for our lunches and I wanted to try something new this time so went original ramen. Very few ingredients but somehow it’s just so tasty and super quick to make! Let me know what you think!
Ingredients – Serves 2 for the week!
Pork shoulder joint (around 2kg)
Bunch of spring onions, finely sliced
1 onion, finely sliced
3-4 tins of sweetcorn, drained
Baby spinach
Chicken Stock cubes
Rice Noodles
Method
Heat oven to 180 degrees Celsius.
In a large frying pan, heat some oil and sear the pork joint all over so it is a little crispy on each side.
Pop on a large baking tray and bake in the oven, with the onion, for about 1 hour and lots of salt and pepper (it may need longer depending how big it is).
Time to pop it in the lunchbox:
Add a slice or two of delicious pork, a tablespoon or 2 of sweetcorn, a handful of spring onions and a large handful of baby spinach. Pop in a chicken stock cube and the rice noodles and you’re ready to transport this to work!
When it’s time for lunch, simply pop it in a bowl and pour over some boiling water. Let this sit for a couple of minutes and then enjoy!!
