Fajitas!

Oh wow aren’t fajitas great? What a fantastic meal when you don’t know what you fancy! It ticks all the boxes. I make mine with turkey as that’s a little healthier and tastes the same with all the flavour but any meat works good too!

I make my mine without the help of a kit and you can to – these are super easy!

Ingredients – serves 2

2 x Turkey breasts, sliced

1 x red pepper, sliced

1 x onion, sliced

1 x red onion, sliced

1 x yellow or green pepper, sliced

Handful of mushrooms, sliced

2 tsps paprika

2 tsps cayenne pepper

1 tsp cumin

To serve: wraps, sour cream/tzatziki, salsa, guacamole (make your own by mashing a couple of avocados with some chopped coriander, lime zest, lime juice and some finely sliced spring onions if you have them!)

Method

So ridiculously easy:

Heat a couple of tablespoons of oil in a large frying pan. Add the onions, peppers, Turkey and mushrooms and the seasoning. Stir so everything is coated in the lovely flavours,

Season with some salt and pepper.

Pop the lid on the pan and let this cook away for about 10-15 minutes. Keep an eye on it and do stir regularly.

When you’re ready, serve on the wrap with a dollop of all your fave sides!
