I could eat aubergine every day, I absolutely love it. I especially love it when its super crispy. This is such a simple dish, so light and full of flavour.
Ingredients – Serves 4
3 aubergines, sliced into circles
250g natural yogurt
2-3 tsp harissa paste
Handful pomegranates
Handful of mint, finely chopped
Salmon x 4
1 lemon
Method
Heat the oven to approx 170 degrees celsius.
Lay the aubergine slices on a baking tray, brush over some olive oil and pop in the oven for about 40-60 minutes. Turn half way over and keep checking them to ensure you turn them enough so they crisp up!
For the final 20 minutes, pop the salmon in the oven in a lovely foil parcel with a drizzle of oil and a slice of lemon on the top.
Mix the harissa with the yogurt.
Serve a piece of salmon, with a few slices of aubergine. Drizzle some lovely harissa yogurt over the aubergine and sprinkle with some pomegranates and mint.
