Steak Salad

It was a Saturday night and we had been on our feet all day shopping (oops!) and fancied something light for lunch. The boyfriend loves a steak, but its so easy to serve it with chips or mash and can sometimes be quite heavy. Instead I thought lets make a salad out of it! This had great flavours, the rocket and radishes offer a great peppery flavour that mixes with the steak and the mozzarella cools the spice from the dressing!

Ingredients – Serves 2

2 steaks

3-4 x radishes, finely sliced

Rocket

2 x Spring onions, finely sliced

300g mozerella, sliced

2 x beef tomatoes, sliced

Chimchurri Dressing

1 red chilli, sliced

30g flat leaf parsley

30g coriander

3 x shallots, finely sliced

2 x garlic cloves, finely sliced

1/2 lemon juice

7 tbsp extra virgin olive oil

2 tbsp white wine vinegar

 

Method

Gently fry the shallots in a little oil for 2 minutes.

Blitz together the chilli, parsley, coriander, warm shallots, garlic, lemon juice, white wine vinegar and 4 tbsp extra virgin olive oil. When this is nice and blitzed, stir in the remaining extra virgin olive oil.

Set aside.

Heat some oil in a griddle pan. When this is nice and hot, add the steak and fry for 2-3 minutes each side. Set aside and cover with foil to rest for a few minutes.

Time to layer up the salad! Rocket, mozzarella slices, tomato slices and radishes. Slice the steak into strips and add to the salad.

Drizzle over the chimchurri sauce and enjoy!
