This dish is really easy to make and so so yummy. It’s an Ottolenghi recipe from his Simple book and I highly recommend a try!
Ingredients
450g cod fillets
1 garlic clove, crushed
1 egg
1 1/2 tsp cumin seeds
4 limes
20g coriander leaves, finely chopped
120g greek yogurt
1/2 mango, peeled and finely sliced
1 red chilli, finely sliced
1/2 red onion, finely sliced
12 corn or flour tortillas
Method
Blitz together the fish, garlic, egg, 1 tsp cumin seeds and 3/4 lime zest with some salt. You want the fish to form a rough paste. Transfer to a bowl and add the coriander and mix together.
Form into 12 small round fishcakes. Pop in the fridge for 15-20 minutes to firm up.
In a small bowl, mix together the yogurt with the remaining cumin seeds and lime zest with some salt. Mix together.
In a second bowl, mix together the onion, mango and chilli.
Serve like a cheeky fajita: tortilla, dollop of yogurt and some mango salsa.
Some cheeky potatoes and extra coriander on the side won’t go a miss ;).
