Lunchbox: Throwing it Altogether

Hey guys, I just wanted to post a short post about lunches and how super easy it is to bring a packed lunch to work, saving money and being a little healthier! I started a new job this year and have already established myself as a lunchboxer…. already dubbed the ‘queen of lunchboxes’  – thank you!

One of my favourite lunchboxes is a literal throwing it all together shebang and building up a lunch. It’s so easy and actually pretty cheap and you can change it up each day depending on leftovers or whatever is in the fridge!


Green Lentils

Bulgar Wheat/Pearl Barley/Quinoa

Yellow, Red, Green Pepper, sliced

Feta, crumbled

Red Onion, sliced

Courgette, grated

Radishes, sliced

Spring Onions, finely sliced

Chicken Thighs


Additions: Carrots, Mushrooms, Any other type of nut,  sun-dried tomatoes etc.


Cook the lentils and accompaniment (bulgar wheat, pearl barley. quinoa) to packet instructions. 

Roast the peppers and red onions at 170 degrees celsius for about 30 minutes.

Sprinkle the chicken with some salt and pepper and some mixed herbs, drizzle of oil and roast in the oven for 30 minutes. 

Pile up – lentils on the bottom, topped with the roasted veggies, radish slices, some grated courgette, some sliced spring onions, a few nuts and a crumbling of feta. 


Take this to work and enjoyyyyy! It’s so quick to pile together and everything can be included!

I just wanted to demonstrate how easy it can be to rustle up a great, tasty packed lunch!
