Vegan Stuffed Peppers

I made these for my housemates vegan boyfriend when we were having a big roast dinner and didn’t want him to go hungry! They went down a total treat and I highly recommend! So ridiculously simple and easy!


1 red pepper

1/2 red onion

1/2 onion

1 garlic clove

1/2 chilli

6 mushrooms

Handful of pine nuts, toasted

1 tbsp tahini

Lots of salt and pepper

1 tbsp breadcrumbs

1 tbsp nutritional yeast



In a frying pan, gently fry the mushrooms, red onion, white onion and chilli until soft.

Mix the mushroom mixture with the tahini, pine nuts and some salt and pepper. Cut and deseed the peppers and bake in the oven with some olive oil drizzled over for 10-15 minutes. Remove from the oven and stuff each half with the mushroom mix.

In a bowl mix the nutritional yeast and the breadcrumbs. Sprinkle this over the top of the peppers.

Bake in the oven (about 180 degrees) for 10-15 minutes.
