Granted, the name perhaps does not sound as delicious as it could… but this was an excellent week of lunches and just demonstrates how you do not need anything majorly fancy to make delicious and easy going lunches!
Ingredients (serves 3 (for 5 days))
Green Lentils
Bulgar Wheat/Quinoa
Red pepper x 2, sliced
Yellow Pepper x 2, sliced
Courgette x 2, sliced
Aubergine, cubed
Spring Onions, finely sliced
Tomatoes, quartered
Feta x 2 packs
Hazelnuts
Pesto
Optional: Literally anything else you fancy!
Method
Cook the Bulgar wheat/quinoa and lentils to packet instructions.
Pop the veggies on a roasting tray, season and add a teaspoon of mixed herbs if you have them. Drizzle with olive oil and pop in the oven at about 180 degrees Celsius for approx 30 minutes.
Let everything cool.
Now it’s time to prep !
Line those Tupperware up (or box everything and make each evening). Add a couple of tablespoons of lentils and of Bulgar wheat/quinoa in the bottom. Top with some roasted veggies. Break off a chunk of feta and pop that in, followed by a couple of chopped tomatoes and a sliced spring onion! Finalllyyyy… sprinkle of a few hazelnuts and add a dollop of pesto.
Enjoy!! Honestly this is so yummy and so incredibly filling! The best part is you can add anything to this – some days I added left over bits of the previous nights dinner, some other nuts, yogurt mixed with pesto instead of plain pesto, some sliced chilli, grated courgette or some spinach leaves. The options are endless!
