Pesto Pasta

Sorry it’s been a while since my last post! Getting back into the New Year was harder than I expected!

Today we have a totally simple and incredibly easy comforting pasta that takes 20-30 minutes max!

Ingredients – serves 2

Pasta, approx 75g per person

For the pesto

50g pine nuts

60g pack basil x2

1 clove of garlic, grated

1 tbsp grated Parmesan (optional)

1 lemon, juice

4-5 tbsp olive oil

Optional additions: 1 onion, finely sliced, handful of Mushrooms, sliced

Method

Pop a pan of water on the hob and bring to the boil. Cook the pasta to packet instructions.

Meanwhile, fry the onions and mushrooms in a little oil and salt and pepper until they are soft.

Place all the pesto ingredients in a food processor with a tablespoon or 2 of water and blend until smooth.

When the pasta is nicely cooked drain it and pop in a two bowls with the mushrooms and onions and a couple of great dollops of pesto. Enjoy!
