You guys know all about our Christmas Party and how I planned it! The original recipes for all of these dishes came from the Polpo Cookbook, and we adapted them slightly depending on timings!
We wanted light and refreshing starters, but something a little special!
Smoked Salmon, Ricotta & Dill Wrap
Ingredients
100g soft ricotta
1 lemon, zest and juice
1 handful of dill
8 slices of smoked salmon
Salt and Pepper
Cocktail sticks
Method
Combine ricotta, lemon zest and juice, dill and some salt and pepper.
Place a large teaspoon of te mixture on a slice of salmon and roll iy up. Skewer with a cocktail stick.
Repeat until all 8 finished.
Rocket and Walnut Pesto Crostini
Ingredients
300g rocket
300g walnuts, roughly choped
150g grated parmesan
1 tablsepoon finely chopped garlic
Salt and pepper
Extra virign olive oil
1 french stick, sliced and lightly toasted
Method
Mix leaves with walnuts, parmsan, garlic and some salt and pepper. Once the ingredients are combined, put all or half the mixture into a food processor. Pulse, slowly adding olive oil until it’s the right consistency. Thick enough to spread! Continue until all pulsed.
Smear onto toasted bread.
Tomato and Mozzarella Salad
Ingredients
Rocket
300g mozzarella, drained and torn
16-20 cherry tomatoes, halved
Salt and Pepper
Extra Virgin olive oil
Method
Lay out a small handful of rocket onto each plate, top with approx. 4-5 tomato halves and a handful of torn mozarella. Season and drizzle with some extra virgin olive oil.
Plate up!
We gave everyone one salmon roll, two pesto crostini’s and a little salad!
It was a really great starter and just filling enough that we could wait until the mains were ready but were not too full!
