Rice One Pot

This dish is one of my boyfriends absolute faves! It is so easy to make and super warming and comforting. One of those ‘urgh monday what shall we make’ dinners! Sometimes I add chicken to this, sometimes I make less and serve it with some white fish, but tonight we fancied it simple and as is!

Ingredients

250g risotto/paella rice

1 onion, finely chopped

2 cloves garlic, grated/finely chopped

1 red pepper, finely sliced

180g chestnut mushrooms

125g Shittake mushrooms

1 tsp mixed herbs

1 tsp turmeric

1 tsp paprika

125g chorizo, cubed

1200 ml vegetable stock

 

Method

Fry the chorizo in a large pan for approximately 5 minutes until a little crispy. Set aside.

In the same pan add a little oil, the onion and the garlic and let this fry for about 5 minutes until soft – don’t let it get too crispy! Add the mushrooms and a little salt and let them soften slightly.

Add the rice and stir through.

Then to the pan, add about 500ml of the stock and the red pepper. Stir through and leave this simmering away for about 5 minutes. By this point the stock should have soaked up and add another 500ml, stir and let it simmer away for about 5 minutes. By this point it should be almost done. Add in the chorizo and the remaining stock and stir through. Let this sit and simmer for another 5 minutes. Taste the rice – it should be ready to go! If it isn’t add a little more water until the rice is soft.

 

Serve dolloped in some bowls!
