Chicken, Chorizo & Beans

Thought I’d share this little dinner I made this evening – super easy and only 3 main ingredients!

I want to be able to demonstrate that often it doesn’t take a load of ingredients or some fancy ingredients to make a tasty, easy meal!

Ingredients

Chicken thighs (2-3 per person depending on hunger levels) skin on and bone in!

100g chorizo

400g tin butter beans

Optional: a few potatoes cubed or some lovely bread and possibly some veggies!

Method

Heat the oven to approx 180 degrees Celsius (fan).

In a large baking tray add the cubed potatoes (if using) in one corner and lay the chicken pieces next to them in the rest of the tray. Season everything with lots of salt and pepper and drizzle over some olive oil.

Pop in the oven for 40 minutes.

After 20 minutes add the chorizo and the beans, a little extra oil and pop the tray back in the oven for 20 minutes.

Remove from the oven and serve!

I hope you enjoy it! The beans go nice and crunchy making them super yummy!
