This pasta is an absolute classic in our flat – anytime we want something comforting or just don’t know what we want we make this. My lovely housemate and I created it at university and we pretty much lived on it hence why it has no title but ‘special’! And pasta is just the best right!?
Also FYI, this really can only made in giant portions…
Ingredients
Spaghetti approx 75-100g per person
1 clove garlic, finely sliced
1 Courgette, sliced how you fancy
Mushrooms, a handful or two sliced
Bacon, streaky is better and I would go for 2-3 slices per person (again more is acceptable!) and slice into bitesize(ish) pieces.
Creme Fraiche, 2-3 tbsp (but more is acceptable!)
Parmesan, grated
Salt and Pepper
Optional – pinch of chilli flakes
Method
Heat a pan of water, and cook your spaghetti to packet instructions.
Meanwhile, in a pan heat a little oil and add the bacon and let this cook for a few minutes and then add the garlic, mushrooms and courgette and let this all cook together. Add some chilli flakes here if you fancy it!
Drain the pasta and add this to the pan with the bacon and the veggies.
Add the creme fraiche with some salt and pepper and stir it all together. Also at this point add a tablespoon of parmesan and stir that through.
Serve this into some lovely pasta bowls and sprinkle over some extra parmesan!!
