You guys know I bloody love tart for in my lunchbox! I know this is similar to one a few weeks ago, but I just had to tell you about this as it really was cracking. The complete beauty of a tart is it is so easy, pretty cheap, and you can top if with just about anything!
It’s so great for a lunchbox because you make it on a Sunday and that’s you sorted for the week! If you’re struggling with what to make this week, or just want to give packed lunches a try – this is perfect!
Ingredients
1 onion, finely sliced
1 courgette, finely sliced
Handful of mushrooms, sliced
Pesto – shop bought is totally fine or get creative and make you’re own! I’ve got a recipe here you can try!
Mozzarella, sliced
Parma ham, sliced
Puff pastry – I get the ready rolled sheet as it just makes life easier!
1 lemon
Method
In a pan, add a little olive oil and cook the onion for a couple of minutes and then add the mushrooms and courgette. Let this cook for about 3 minutes and add a squeeze of lemon. Keep stirring until everything is a little browned and cooked.
Remove from the heat, another squeeze of lemon and leave to cool.
Roll out the pastry (make sure it has come to room temperature first). Prick the base of the pastry with a fork, leaving about a 1 inch border.
Top the pastry with the pesto, leaving the border.
Then add the veggies, top with the parma ham and finally the sliced mozzarella and pop in the oven on the middle shelf for about 20-25 minutes at 180 degrees Celsius – do keep checking about 15 minutes you don’t want it to burn!
Remove from the oven, leave it to cool and slice. Serve in a lunchbox with a gorgeous salad!
