This is a real classic lunchbox for us! It does take a bit of time to put together, but it’s totally worth it. The beauty of the burgers and hummus is that it goes with whatever you fancy. I made some pickled red onion and pickled cucumber to go with it and then added spinach, avocado, grated carrot and tomatoes but if you have other things in the fridge leftover that works too – It’s a great dish for using up what you have in the fridge! The Chickpea Burgers actually come from Hellmans and the hummus from Deliciously Ella – but I want to demonstrate that making packed lunches is super easy and you can pull stuff together from various recipes! I recommend two patties per person so you may need double the burger ingredients depending on how many you’re buying for!
Ingredients
Burgers
2 x 400g tinned chickpeas
2 eggs
2 garlic cloves
1 red onion
2 tbsp ground cumin
2 tbsp ground chilli
1 bunch fresh coriander
8- 10 tablespoons of oatmeal
Hummus
2 x 400g can chickpeas, drained and washed
3 tbsp olive oil
2 tbsp tahini
Juice of 1 lemon
1 garlic clove, peeled and roasted for 10 minutes
1 teaspoon ground cumin
Pinch of sea salt flakes
Pickled Cucumber
1 cucumber
2 tablespoons sugar
2 cups of vinegar (500ml)
1 cup of water (250ml)
Pickled Red onion
2 red onions
3 limes
Serve with: Spinach, avocados, grated carrots, cherry tomatoes.
Method – Burgers
For the patty put all the ingredients except oatmeal in a blender or food processor and blend well.
Stir the oatmeal in and leave to rest for about 15 minutes.
Form patties of chickpea mixture (you’ll get about 10 small burgers), and fry them in oil for about 4-5 minutes on each side.
*FYI this recipe makes an amazing dinner as well if you make normal burger sizes and serve in a bun with mayo!
Method – Hummus
Pop all the ingredients in a blend and blend until smooth!
Method – Pickled Cucumber
The saffron pickles are made by cutting the cucumber into thin slices and place them in a bowl.
Add sugar, vinegar, water and salt in a saucepan and boil it all up – pour over cucumber slices, and let them soak for about 1 hour.
Method – Pickled Red Onion
Slice the red onions and pop in a bowl and squeeze over the juice of the limes. Stir, cover and leave until ready to serve.
When you’re ready get your Tupperware and pile everything up!
