The boyfriend wanted stir fry for dinner so I thought I would put together a little something together! This dish is soo easy and so so quick. I used chicken but you can totally substitute this for aubergine or tofu!
Ingredients
2 Chicken breast, into 1.5 cm chunks/tofu/aubergine
Cornflour
1 egg
4 tbsp sesame oil
3 tbsp dark soy sauce
2 tbsp honey
Sesame seeds
Pack of stir fry veg
Noodles
Method
In one bowl whisk the egg and on a plate add a 100g of cornflour (you may need more than this!)
Take each piece of chicken and coat in the cornflour, then in the egg mix and back in the cornflour. If using tofu you can skip the egg step and if using aubergine I suggest frying this for about 25 minutes before.
When this is done, heat 1-2 tbsp of sesame oil in a pan or wok and fry the chicken. You want it to be mostly cooked through. It doesn’t have to be fully cooked but not pink!
Remove the chicken when it is cooked onto a sheet of kitchen towel.
In the same pan/wok add 2 tbsp sesame oil and 2 tbsp dark soy sauce and let this boil up – it will only take a few seconds. Then add 1 tbsp honey and stir immediately. You don’t want the honey to burn!
Add the chicken back to the pan and stir, making sure each piece of chicken is coated.
Add a further tbsp of soy sauce and honey and keep stirring, allowing the sauce to get darker. Turn the heat down and let it bubble for 10-15 minutes. At this point, start cooking your stir fry veg and noodles! After 5 minutes add a tbsp or two of sesame seeds and stir to coat again.
The chicken can sit in the heat until everything else is ready, just stir it every now and again!
Plate up your veg and noodles and add this delicious chicken!
