This recipe actually came from Women’s Health magazine and was two separate recipes that I amalgamated into one lunchbox meal.
It was so good we had it two weeks in a row!
Ingredients: (this recipe originally was for one person so the list below is a doubling of the marinade ingredients and then I did approx 4 chicken breasts which lasted enough for 3 people for 3-4 days)
4 tbsp soy sauce
2 tbsp apple cider vinegar
1 tbsp honey
1 tbsp sesame oil
1 garlic clove diced
1 tsp grated ginger
4 chicken breasts, cut into chunks
1/4-1/2 large watermelon, chopped into cubes
1-2 packets feta, cubed (depends how much u love cheese!)
1 red onion, sliced
Pack of spinach
Mix together all ingredients except sesame seeds and marinate the chicken for at least 1 hour in the fridge (I recommend doing it for as long as poss!)
Once its reasy, thread it on to skewers and cook in the oven for 20-25 mins until juices run clear.
Remove from the oven and let cool. De-skewer the chicken into a bowl and sprinkle with sesame seeds
In your Tupperware, add the spinach, feta, red onion and watermelon and top with a few slices of chicken!
This is sooo yum! If you’re looking for something extra to go with it, try some humous and pitta bread or carrots!
