Starter: Chorizo in Wine

Two of the best things some might say – chorizo and wine? I made this dish a long time ago as an accompaniment to my salt and pepper squid, and the two just went hand in hand as the perfect starter. I found this recipe just on BBC Food and its so easy to make!

Ingredients

2 tbsp olive oil

1 banana shallot, sliced

1 garlic clove, finely chopped

300g chorizo, cut into 2.5cm slices

2 fresh bay leaves – I’ll be honest I’m pretty sure I didn’t have any of these so made without!

200ml red wine

 

Method

Heat a frying pan until medium hot and add the olive oil, shallot and garlic and fry for 2-3 minutes or until softened.

Add the chorizo and fry for 1-2 minutes until crisp and the oil has released.

Add the bay leaves and the red wine and cook until the volume of wine has reduced to just coat the chorizo.
