Sorry it’s been a while since my last post – hopefully this delight makes up for it!
I love love love fish pie, but I am not a fan of fish pie mix you can buy in supermarkets, I much prefer a pie with just salmon or cod. I created this recipe for my housemates a few weeks ago and it was a real winner – already been requested for dinner since! The plus is its also really easy and requires minimal effort.
Serves 3 (I used 3 mini dishes in the pictures but have written the method as if in one large dish!)
1 leek, sliced
2 handfuls of spinach
1 onion, finely chopped
1 clove of garlic, grated/finely chopped
25g plain flour
15 fl. oz. milk
2-3 handfuls of grated parmesan
2 Salmon fillets
2 cod fillets
Optional: Roast potatoes to serve with!
If making roast potatoes, get this on the go now! Once in the oven, start on the pie!
Skin the fish fillets and chop into pieces and put into an oven proof dish – cover with a tea towel/kitchen roll and pop in the fridge.
Heat the oven to 170 degrees Celsius.
In a frying pan on a low heat, add a little oil to a pan and fry the garlic and onion.
In a saucepan, add the butter on a low heat and let this melt. Once melted, remove from the heat and add in the flour and whisk this together (to not to get any lumps!). Put the pan back on the heat and add in the milk a little at a time, whisking as you go. Bring this to the boil (keep an eye on this and keep stirring) and it should start to thicken.
Add the leeks to the frying pan with the onions and garlic and let this sweat for a little.
In the saucepan add some pepper and the parmesan and keep whisking. It should be thick by this point (be careful not to let it catch at the bottom). When this is ready remove from the heat.
Add the spinach to the leek/onion mixture and stir this in until wilted.
Remove the pie dish from the fridge and pour in the spinach leek mixture. Next pour over the cheesy sauce. Using a spoon, mix this all together to everything is covered.
Take a piece of filo pastry and crumple and place on top, do this with as many sheets as it takes to cover the top.
Bake in the oven for 20-25 minutes and the pastry is crispy on top.
