This dish genuinely is the most simple thing ever. My housemate and I love this for when we want something relatively healthy and inexpensive, but don’t know what to cook. It always feels really fresh and the beauty is that there are just a few ingredients and you can also add in any leftovers from the fridge!
Ingredients – Serves 2
2 salmon fillets – try and use fresh just because it’s a bit nicer but honestly frozen is cool too!
1-2 sweet potatoes (depending on size and hunger levels!)
Bag of spinach (or any green salad like rocket)
Soft goats cheese (again as much or as little as you like)
50-100g pumpkin seeds
Approx 1 tablespoon paprika (normal or smoked works fine!)
So this is the main bits but you could add whatever else you have – peppers, grated carrot , feta cheese instead of goats cheese, some extra seeds, pesto (this is a great addition fyi, i’ll link a great recipe we use) or even homemade guacamole (this is also a great addition) and anything else you’ve got!
Preheat the oven to about 170 degrees celsius.
Slice the sweet potatoes into wedges or chunks about 1.5cm thick (whichever you fancy). Put these into a pan, fill with water and bring to the boil on the hob for about 10 minutes. They don’t take as long as white potatoes. You want them soft but not falling apart/mashable!
Drain the potatoes and pour onto a baking tray. Drizzle over some olive oil and the paprika and with your hands toss it all together so each piece is covered. Roast in the oven for about 35-40 minutes.
After about 15 minutes, put the salmon on a baking tray, season and roast in the oven for the remaining time (15-20 minutes).
While everything is roasting in the oven, take a frying pan and put on the hob on a low heat and add the pumpkin seeds. Toast these for about 5-10 minutes. You know if they are ready as they will start to pop!
If you are making pesto – now is the time to get that sorted! Also if you are using anything out of the fridge, get cracking chopping or grating!
You’re ready to plate up! Put a couple of big handfuls of spinach (or whatever you are using) on a plate. Remove the sweet potato and the salmon and serve up on top of the spinach. Sprinkle over the toasted pumpkin seeds and finally break up the goats cheese across the plate.
