My lovely sister made this easy one pot meal whilst we were on holiday and it really is a winner. It’s easy to make and you essentially just throw everything in to a pan and let it cook – minimal effort for the win!

Ingredients
Packet of Chorizo, thinly slices or cubed
2 chicken breasts, chopped into 2cm pieces (ish)
1 red pepper, sliced
1 onion, finely sliced
2 cloves of garlic, grated
600g of basmati rice
400g cooked prawns
1-2 litres of chicken/vegetable stock or water
Green salad – lettuce, spring onions, avocado, cucumber, extra virgin olive oil
Method
Add a dash of olive oil to a deep pan and fry the chorizo until it is crispy.
Remove from the pan and set aside.
In the same pan add the chicken and brown it. Remove and set aside.
Continuing in the same pan, add the onion, garlic and red pepper and cook for a few minutes until the onion is soft.
Add back in the chorizo and chicken and pour in the rice. Stir the rice to coat and add in the stock. I’ve said 1-2 litres – to start cover the rice with stock. Put a lid on the pan and let it simmer to cook the rice. Keep checking it!! If the water is soaking up and the rice is not cooked add some more hot water.
When the rice is almost cooked, add in the prawns and let them heat for about 5 minutes. Keep stirring.
Serve with a simple green salad dressed in a drizzle of olive oil!
