Cajun Salmon

This is one of my favourite dishes and is absolutely perfect for summer. Its from an Olive magazine over a year ago but it’s still such a classic. As we are 4 of us in Sweden (with a boyfriend who eats for England) I have bulked up the original recipe with some roasted new potatoes and a fresh salad. I really hope you enjoy this as much as I do!

Serves 4



I’m currently in Sweden so please forgive the Swedish names!

4 salmon fillets

2 tsp smoked paprika

2 tsp garlic salt

2 tsp dried thyme

2 tsp Black pepper

Half white cabbage

1 red pepper

2 celery. sticks

1 green pepper

1 1/2 tablespoons mayonnaise

1 teaspoon apple cider vinegar

2 handfuls of new potatoes

Salad ingredients – leaves, tomatoes, radishes, spring onion, olive oil and balsamic vinegar



Set the oven to approx 180 degrees Celsius. 

Chop the potatoes and put in a small saucepan, cover with water and cook on the hob. When the water has come to a boil leave them there for about 10 minutes. Also, when the water comes to a boil, add some olive oil to a baking tray and pop in the oven.


Once the potatoes are in the oven they should roast for about 30-40 minutes. 

Now get cracking on the rest!


Finely slice the white cabbage, finely slice the green pepper, finely slice the celery and finely slice the red onion and add altogether in a bowl. 


In a second bowl, add some salad leaves, chop the tomatoes into halves, finely slice the spring onions (I have got a red spring onion here)  and finely slice the radishes. 


In a THIRD bowl mix all the herbs (thyme, garlic salt, smoked paprika, black pepper).


Pour this onto a plate and take each piece of salmon and cover both sides of each piece.


Add a knob of butter and a drizzle of olive oil (so the butter doesn’t burn) and add the salmon pieces cooking for approx 6 minutes each side. 

Dress the salad with a drizzle of olive oil and a drizzle of balsamic vinegar and season with salt and pepper. 

Dress the coleslaw with the mayonnaise and the cider vinegar. 

Get those potatoes out of the oven and serveeee up!!
