This has been an ultimate summer dinner staple of mine for years. It is so easy and honestly so so good. I could probably eat this everyday for a week and not get sick of it. The flavours together are just perfect. You get the warmth of the salmon, bacon and croutons and the coldness of the salad and cheese and it melts in the mouth! Its just perfect for a warm summer day!
Ingredients
2 pieces salmon
4 pieces of streaky bacon
Bag of lettuce (any kind you fancy)
Two avocados, sliced
4 spring onions, finely sliced
Handful of cherry tomatoes, halved
Goats cheese
Handful of toasted pine nuts (I did slightly burn mine I must admit but hey thats ok still tasted fine!).
3 slices of bread (any bread)
2 tablespoons balsamic vinegar
2 tablespoons olive oil (plus extra for roasting fish and croutons)
1 teaspoon mixed herbs
Salt and pepper
Method
Heat oven to 180 dgerees celsius
Get a big tray and on one side of the try put the two pieces of salmon (season with salt and pepper) and drizzle with oil. On the other side of the tray, line the bacon.
Place in oven and cook for 30 minutes.
Meanwhile, add all lettuce, tomatoes, spring onions and avocado to a large bowl. Using a teaspoon, add spoonfuls of goats cheese to the bowl (see picture below) – use as much or as little as you want! Add the toasted pine nuts.
When there is about 10 minutes left on the timer, take the slices of bread and cut into cubes. Put into a bowl and add a tablespoon of olive oil, salt and pepper and the mixed herbs and stir to ensure every piece is covered.
Put these on to a tray and put in the oven for ten minutes. After 5 minutes, turn the croutons over. Don’t worry if they aren’t completely done by the time the salmon and bacon are ready, leave them in for a few more minutes while you finish off the rest of the salad.
After 20 minutes remove the salmon and bacon from the oven (leave croutons in if need be!)
This is how you want the bacon to be – super crispy!
Using a fork, flake the salmon and using your fingers or a knife, break up the bacon into small pieces.
Add both to the salad bowl.
Season with salt and pepper and add the remaining olive oil and balsamic vinegar. Toss toss toss!!! The goats cheese makes it super creamy!
Remove the croutons from the oven and add the salmon.
