Banana Bread!

I know I know, everything I post I say ‘this is so easy’… but I promise you I really mean it with this one!! This banana bread is my absolute go to when I want a snack for my lunches during the week (or have some bananas I need to use up)! 

Seriously tasty and seriously easy!




4 bananas 

55g caster sugar

225g plain flour

2 teaspoons baking powder

75g butter

1 egg (beaten)

100g sultanas

100g walnuts (chopped) (plus a few extra for topping)



Honestly, you will be so shocked at how easy this is!

Preheat oven to 180 degrees Celsius.

In a bowl, mash the 4 bananas with a fork.

In a large mixing bowl, add the butter, sugar, flour, baking powder and beaten egg. Mix this all together with a whisk or spoon. It will resemble a kind of dough (this is ok!)


Stir in the mashed bananas, sultanas and chopped walnuts.


Pour the whole thing into a loaf tin (lined with greaseproof paper) and top with some leftover walnuts


Bake for 50-55 minutes on the middle shelf. You want the outside to be golden and a little crispy. 



As always, replace with any kind of nut or take out the nuts/sultanas if you don’t like either – make it your own!
